Carnitas are my favorite type of meat to eat in a taco. This was my first attempt making it and it was so easy! Not to mention delicious. It does require advance planning as the meat sits in the crock pot over night. I made it for a friend the other night to get a second opinion and he said "That was really good, you should be a chef" to which I replied "I am!" he retorted " Well you should post your recipes" and I said "I do!" so needless to say it was a success 🙂

Ingredients

  • Crock Pot:
  • 1 ½ lbs pork shoulder
  • 1 tsp salt

  • Skillet Seasoning blend:
  • 1-2 chopped jalapeños (depending on how spicy you like it)
  • 1 tsp chopped fresh oregano
  • 1 tsp coriander
  • ¾ tsp paprika
  • ½ tsp black pepper
  • ½ tsp cumin
  • 1 lime or lemon
  • 5 tbsp garlic infused oil
  • 1 ¼ tsp salt
  • ¼ tsp chopped fresh marjoram

Instructions

  1. Put pork shoulder in crock pot pressing salt into both sides
  2. Cook on low overnight
  3. Remove pork from crock pot and put in fridge for a few hour or until fat hardens
  4. Remove meat from fat and pull the meat apart into shredded pieces
  5. Heat skillet on medium high heat
  6. Add garlic infused oil, then add shredded meat
  7. Add all spices and salt
  8. Sauté until meat starts to brown
  9. Add lemon or lime
  10. Serve in a lettuce shell with any toppings of your choice

      No added liquid. The fat from the pork will become the liquid.

      Im confused… you say I mention tomatillos in the recipe but have just checked the recipe several times and I don’t see what you are talking about. As for toppers you can put cheese, cilantro, shredded cabbage, bell peppers, tomatoes or whatever else you like to put on tacos.

          Ahhh got it. Originally I had put tomatillos in the recipe but the second time I made it I did it with out and it was much simpler and just as tasty so I modified the recipe.

    spices -when the recipes calls for chopped spices (chopped oregano) does this mean fresh herbs instead of dried spices? thank you!

      The oregano and marjoram are the only herbs I had used fresh but you could probably substitute them for dry if you wanted to but fresh always takes better in my opinion. I will update the recipe to make it more clear 🙂

    This may be a silly question however – when cooking the shoulder over night on low in the crockpot .. is the meat in liquid? I’ve never used my crockpot to cook anything dry.
