Developing easy fudge recipes to share with you here on How To Make Easy Fudge dot com has been so much fun. Finding ways to make fudge recipes easier has been an exciting challenge and when I find a product that will work perfectly in a simple, 2-ingredient, microwave fudge recipe, I get a bit giddy.

Last week, while shopping at Trader Joe's, I found a jar of Carrot Cake Spread. Now, I've used other jars of store-bought spreads in the past to make Nutella Fudge and Biscoff Cookie Butter Fudgeand store-bought curds to makeLemon Fudge, and Key Lime Fudge. I have even made Strawberry Fudge and Caramel Fudge using jars of ice cream toppings, so I was very hopeful I could use the Carrot Cake Spread to make fudge too.

To be honest, I had never even tried Trader Joe's Carrot Cake Spread but I had hopes that it would have just the right consistency and flavor to make a fabulous carrot cake fudge. I am happy to report it did!

What is a Carrot Cake Spread?

  • It's touted as carrot cake in a jar without flour and eggs. I'm not quite sure that is an accurate description but it definitely does taste similar to carrot cake.
  • Its texture is very similar to a marmalade filled with bits of carrots, raisins, orange peel, and even pineapple.
  • It has a deep dark orange color.
  • It has a nice carrot flavor accented with warm spices, molasses & vanilla.

If you eat a spoonful of the Trader Joe's Carrot Cake Spread, it is incredibly sweet with subtle notes of cinnamon and nutmeg.

I was worried that once blended with white chocolate it would make for an overly sweet fudge but to my surprise the two blended together beautifully to make a really fantastic Carrot Cake Fudge.

This fudge is so good that I didn't feel the need to add any other flavors. A pinch of salt or a dash of cinnamon or nutmeg could be added if you like, but make the fudge using the simple 2-ingredient recipe first then, before you pour it into the pan, taste it to see if you want to boost the flavor.

I'm guessing you'll find it perfect just the way it is.

Microwave method:

  • Stir together one 10-ounce jar of Trader Joe's Carrot Cake Spread with 24 ounces of white chocolate chips (see notes below) in a large microwave-safe mixing bowl.
  • Heat in the microwave at 70% power for 1 minute then remove and stir.
  • Heat for an additional 45 seconds at 70% power then let the bowl rest in the microwave for 3 minutes.
  • Remove the bowl and stir a few times just until the chips begin to melt.
  • Let the bowl rest for 1 more minute, allowing the residual heat to continue to melt the chips, then continue to stir, pressing down on the chips, if needed to melt them all.
  • If needed, you can heat for an additional 10-second burst of 70% power until melted.
  • Spread the fudge into an 8-inch square pan and chill for at least 4 hours or until firm.
  • Remove and cut into 36 squares.

That's it! What could be easier than a 2-ingredient microwave carrot cake fudge?

Stove-top Method:

  • Combine the ingredients in a saucepan and set it over low heat.
  • Stirring often, allow the white chocolate and carrot cake spread to soften until about 75% of it has melted.
  • Remove the pan from the heat and let it rest for 3 minutes before stirring the fudge until smooth and creamy.
  • Spread into the pan, chill until firm, then cut into squares.

What type of white chocolate should I use?

  • I usedNestle Premier White Morsels to make this fudge. These white chocolate chips are actually confectionery coating. They do not contain any cocoa butter but they have a very nice flavor and taste great in this fudge.
  • If you use a pure white chocolate candy bar or chips you'll need to use an additional 4 ounces for a total of 28 ounces.
    • Pure white chocolate is a bit softer than confectionery coating so you need to add a small amount more to the recipe.
    • If using white chocolate candy bars you'll want to finely chop the chocolate so that it melts quickly and evenly.

What type of pan to use for fudge?

  • an 8-inch square pan
  • glass, non-stick, ceramic, aluminum, tin foil, or silicone pan

Should I line my pan?

  • My suggestion is to line your pan with non-stick tin foil. See the video below for a fun trick to make this task easy!
  • You can also line the pan with parchment paper strips. Lay one strip across the pan then lay another strip going the opposite way across the pan.
  • Once your fudge has hardened you can use the tin foil or parchment paper to easily lift the fudge out of the pan.
  • If you can’t line the pan you can grease it with butter. Just know that it’s more challenging to get the fudge out of the pan.

How to store carrot cake fudge?

  • You can store this carrot cake fudge in the refrigerator for up to three weeks.
    • It's best to wrap the fudge in wax paper and then place it in an airtight container in the refrigerator.

Can I freeze this fudge?

  • Yes. Cover the fudge well with wax paper, then over-wrap it in a layer of tin foil, then place it in a large zip-top bag and remove as much air as possible before placing it in the freezer.
  • Your fudge will stay fresh in the freezer for about 3 months.

How to thaw frozen fudge?

  • Remove the fudge from the freezer and let it sit at room temperature for at least one hour before taking it out of the zip-top bag. This will allow it to thaw without developing condensation on the surface of the fudge.

Ingredients

  • 24 - 28 ounces white chocolate chips* (see note below)
  • 10 ounces carrot cake spread

NOTE: If using white confectionery coating chips (no cocoa butter listed in the ingredients) use 24 ounces, if using pure white chocolate (with cocoa butter listed in the ingredients) then use 28 ounces.

    Instructions

    1. Line an 8-inch square pan with non-stick tin foil or parchment paper.

    2. Pour the white chocolate chips into a microwave-safe mixing bowl.

    3. Stir in the carrot cake spread.

    4. Heat at 70% power for 1 minute then remove and stir.

    5. Heat for an additional 45 seconds at 70% power then let the bowl rest in the microwave for 3 minutes.

    6. Remove and stir slowly, pressing down with a rubber spatula on the white chocolate chips until they are melted.

    7. Spread into the prepared pan.

    8. Refrigerate for 4 hours until firm enough to cut into 36 squares.

    Recipe Notes

    Store in an airtight container in the refrigerator for up to 3 weeks.

    The fudge can be frozen for up to 3 months. Wrap it well in plastic wrap or wax paper then place it in an airtight container or a zip-top bag and place it in the freezer. To thaw, allow the fudge to sit at room temperature for several hours before opening the package. This will keep condensation from forming on your fudge causing it to be sticky.
