For coffee, the syrup need not have a sticky consistency. However, I prefer a slightly thick and sticky consistency to use in multiple ways. Just the cinnamon sticks could be used but I prefer ground cinnamon as it infuses intense flavour and aroma and is more cost-effective than a bunch of cinnamon sticks.

Substitutions and Variations

Brown sugar can be replaced with white sugar. The taste and flavour won’t be the same. Perhaps, this will impact the taste and colour as white sugar doesn’t have a molasses and caramelised taste. However, the syrup will be equally enjoyable.

You could replace half the quantity of brown sugar with maple syrup.

A dash of vanilla extract adds a lovely flavour.

Serving Suggestions?

It is a perfect coffee syrup to use in cinnamon dolcecoffee and also in a homemade cinnamon latte.

It adds a pop to herbal tea: turmeric ginger cinnamon tea, and hibiscus tea. Leave out cinnamon and sweetener and use this syrup.

It’s perfect to pour on pancakes, waffles and crepes or use in the batter instead of sweetener.

Use it to make cinnamon rolls. Either add it to the cream cheese icing or in the filling to intensify the cinnamon flavour.

Makes a lovely addition to apple turnovers.

Storage

Homemade cinnamon dolce syrup has a long shelf life as it doesn’t contain any perishable ingredients. Consider storing it in a glass jar or bottle.

Itstays good for up to 4-5 weeks if stored properly in a cleanairtight container at room temperature.

Fridge: It stays fresh for up to 6 months if stored in the fridge in a clean airtight glass bottle.

Freezer: Store it in an ice cube tray. Those flavoured ice cubes add a lovely flavour to iced tea such as iced green tea, iced london fog tea.

Tips and Tricks

Water and sugar proportions determine the thickness of the syrup. Less sugar than water yields thin consistency and a higher sugar quantity than water yields thick and sticky consistency.

Cinnamon sticks are used to impart pronounced flavour. Leave it out if you don’t like the extremely rich flavour.

Do not attempt to quick release the pressure. It will cause the hot syrup to splutter all around. Let the pressure release naturally and wait until the pin next to the steam release valve drops.

The time taken to release pressure naturally varies dependingon the quantity inside the pot and the instant pot model. I use IP duo 7 in 1 and for the mentioned measurements it took around 16 minutes for the knob to drop after the pressure is completely released.

Usually, syrup thickens a little as it cools. However, if it doesn't turn out sticky and to your desired consistency, simmer it in saute mode for 5 minutes or until it thickens and reaches your desired consistency. Stir regularly to prevent the syrup from sticking to the base of the pot.

Set the pressure cook/manual mode for 0 minutes if you do not want a thick and sticky syrup.

I've strained syrup in a fine mesh steel strainer. However, the ground cinnamon won't be filtered out completely. The syrup still has traces of it and I absolutely have no issue with it.

If you want your syrup to be clear then use cinnamon sticks and leave out ground cinnamon. Once the syrup is ready take out the sticks.

How to make cinnamon dolce syrup on the stovetop?

Place the medium saucepan on the stoveand combine water, brown sugar, ground cinnamon and cinnamon sticks.

Now turn the heat on, mix welland boil the mixture in the saucepan over medium heat.

Simmer for around 20 minutes or until the syrup thickens.

Switch the heat off and let the syrup cool completely. Strain and store the syrup in a glass bottle.
