Now I don’t claim to be a master chef, and I’m definitely not nor ever will be a food blogger. But my MO is sharing mom hacks with you, and basically anything that makes my life easier. My jam is finding ways to live life to the fullest with less effort. Work smarter not harder right? Chili is one of those recipes that fits that category. Its so easy to customize for anyone’s specific diet. Paleo, keto, vegetarian or vegan- it can be manipulated so many different ways. I came up with this easy Trader Joes keto chili recipe because I was out of canned tomatoes, and had to improvise on the fly! I’m so glad I did because I love the flavor of this and I hope you do too.

I love making chili for a few reasons. For one, you can make a double match so easily. Why not just double all your ingredients up before throwing it in the pot? I freeze the extra in ziploc bags. It’s also the perfect meal to take to friends who need a dinner. You’re already making dinner for your family right? Why not just double it up if you’ve signed up for a meal train and now you’ve got two meals in one! That’s two mom hacks right there ladies! BOOM!

Chili can also be a really fast meal to make. Or you can let it simmer in a slow cooker all day. I love coming home to that goodness. I also love making big batches for parties because its an easy casual meal for people to serve themselves. If you’re really short on time I recommend buying pre-chopped onions and celery! I also love using the Dorot frozen garlic cubes. No chopping required?! yasssss (M0M HACK!)

So what’s my secret ingredient?

Tragic story side note… I recently made a double batch of chili for my daughters birthday at the ranch only to realize when I woke up in the morning that I had left it out all night! Boooo. So the next night I needed to make it again. It’s like ten pm you guys, and I realize I forgot to buy more canned tomatoes! But I did find this sauce from Trader Joes! And I’m so glad I did. The flavor was fantastic.

So here’s the skinny:

How to make Trader Joes Keto Chili:

Pour 2 tbsp of avocado oil into a pan and add three cubes of frozen garlic. Wait a sec for the garlic to thaw a bit. Add 1 whole chopped red onion and three chopped celery stalks. Add 1 1/2 pounds of ground beef to the mixture and brown. I used 85/15. Drain the fat baby! Now add this mixture to a pot or your slow cooker. Next add one whole jar of Trader Joes Italian Marinara sauce with Barolo wine (and no this is not a sponsored post! I almost exclusively grocery shop at Trader Joes because its close and well amazing).

Add the following and mix together:

6oz jar of tomato paste
4oz jar green chiles
1/4 cu chili seasoning
2 tbsp cumin (I like cumin!)
1 tbsp smoked paprika
sea salt

Stir periodically and let simmer for at least 30 mins up to 1 hour on your stove. Or let it sit in your slow cooker for a few hours on low. You don’t need to slow cook it as long as most chili recipes because remember you are working with a pre-made sauce where the tomatoes have already been cooked down.

Toppings I love: Avocado! Always. Sour cream, green onion, shredded cheese, cilantro, more sea salt (can you tell I love it?), Fritos, and Trader Joes cornbread crisps! Have you tried those yet? They are sooo yummy and my kids love them too! And you have ever tried eating your chili over rice? It’s amazing and if you need to stretch your recipe to feed a crowd that’s another good hack! Its not low carb though so I don’t do it anymore, but sometimes I seriously contemplate it!

I love this low carb keto chili recipe too, and when I do have all the ingredients its usually my go-to. My kids are obsessed with it!
