I love the holidays. The festivities, the snow, the decorations, and the food. Oh, the food.

But the food around the holidays is typically not the healthiest. It’s usually heavy, cheesy, carb-loaded, rich, and—who are we kidding—delicious.

But healthy, fresh, good-for-you food can be just as delicious.

I love to host a Healthy Restart Brunch (as I like to call it) during the busy holiday season. It gives everyone a nice break to take a deep breath, relax, and recharge.A table full of healthy brunch recipes is just what we need during the indulgent holidays.

What better way to host a Healthy Restart Brunch full of healthy brunch recipes than with the help of Emergen-C? I’ve partnered with Emergen-C before to talk about how it can be an amazing post-workout drink in the summer after hiking. And, as we know already, it’s definitely helpful during the winter.

I always have Emergen-C in my pantry, no matter the season.Just one little package has 1,000 mg of vitamin C in addition to other essential vitamins. All of that vitamin C, electrolytes, and antioxidants are wonderful when it comes to staying replenished, something we could definitely benefit from if you live somewhere (like me) where it’s currently -3 degrees.

For our Healthy Restart Brunch, I turn Emergen-C into a fun, festive Mockmosa with fresh tangerine juice, sparkling water, and a little coconut milk. It’s delicious, refreshing, and tastes just like a mimosa!

The food portion comes in the form of two healthy brunch recipes. One actually involves no cooking at all. A Build-Your-Own Granola Bar is a fun and easy addition to any brunch. The second, a Turkey Sausage, Sweet Potato, and Kale Breakfast Casserole, is so hearty and filling, yet full of so many nutritious goodies.

So, grab your girlfriends or your family and invite them over for brunch!

This brunch is truly a breeze to put together. The casserole can be made the night before and heated in the oven before serving. People will love creating their own granola bowls with the Granola Bar, and you’ll love how easy it was to throw together. And for the decor, I keep things simple and sweet.

I love to decorate the table with fresh flowers. Flowers just remind me of brunch. They’re beautiful, bright, and a lovely way to start your day. When I think of brunch, I think of all things fresh. Fresh flowers, fresh fruit, freshly baked breads. Use what’s in nature or in your refrigerator. No need to get fancy!

Here, I fill mason jars with lemon slices, wrap them in natural twine, and stock them with flowers. Instead of lemon slices, using fresh cranberries would also be lovely and seasonal.

Then, serve up some fizzy, fruity Mockmosas, and watch as your guests start to forget that we’re in the dead of winter.

The Build-Your-Own Granola Bar is a perfect way to please everyone. For it, simply put out:

Granola. I put two different choices: a nut granola and a chocolate and strawberry granola. Other great options are muesli or grain-free granola for your gluten-free guests.

Greek yogurt.

Milk. Dairy and some nut versions.

Fresh fruit. Blueberries are bananas are my favorite here.

Toppings. The best part. I used cocao nibs, dried cranberries, and coconut. You could also put out any dried fruit you’d like, walnuts, almonds, honey, crystallizedginger, maple syrup, spices, nut butters, pumpkin butter, etc.

The final touch is an easy and delicious Turkey Sausage, Kale, and Sweet Potato Breakfast Casserole. I keep seeing ‘Breakfast Casseroles’ everywhere, but I’ve actually been making them forever in the form of crust-less quiche, which is essentially what they are. It’s a great way to serve a crowd. It’s hearty. And the oven does most of the work for you.

This casserole combines turkey sausage with plenty of fresh veggies, such as kale, sweet potatoes, bell pepper, and onion. Fresh herbs and some mozzarella give it extra oomph.

And it’s so good. The best part is that it keeps wonderfully for a few days, so you could absolutely make it ahead of time.

Ingredients:

  • 2 packets of Emergen-C Tangerine
  • 2 cups of freshly squeezed tangerine juice
  • 1 cup sparkling water
  • Coconut milk, for topping
In a pitcher, mix the Emergen-C with the tangerine juice. Pour in the sparkling water. Divide into champagne flutes and top each flute with a tablespoon of coconut milk. Garnish with orange slices.

Ingredients:

  • 2 tablespoons olive or avocado oil
  • 10 ounces fully-cooked turkey sausage links, sliced
  • 1 medium sweet potato, peeled and cubed
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 bunch kale, de-stemmed and chopped
  • 1 red bell pepper
  • 15 eggs
  • 2/3 cup milk
  • 8 ounces shredded mozzarella
  • sea salt and pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
Preheat the oven to 350 degrees. In a hot skillet, add 1 tablespoon of oil and saute the onion, garlic, and bell pepper until softened. Add in the sliced turkey sausage links to warm through. Season to taste with sea salt and pepper. Pour into a large bowl and set aside.
Add the other tablespoon of oil to the skillet and saute the sweet potatoes. Cook the sweet potatoes until slightly golden and cooked through but not falling apart. Add in the kale until just wilted and pour the potato mixture into the vegetable bowl. Let cool.
In another bowl, whisk the eggs with the milk, sea salt, pepper, rosemary, and thyme. Whisk very well to combine.
Lightly grease a baking casserole and evenly spread the vegetable and potato mixture on the bottom. Pour the egg mixture over top, moving the vegetables around to ensure everything is even and coated. Bake for 20 minutes. At the 20 minute mark, sprinkle the cheese evenly over the top and bake for 20 minutes more, until the cheese is golden and the casserole is baked through.
