Life is better with waffles

It is something about sitting down and eating a real breakfast. It sets the tone for the day and makes you feel great. I know there are some people who aren’t big breakfast eaters, but breakfast definitely makes a difference.

With just a few ingredients, I’m going to show y’all how to make a breakfast staple. We’re making WAFFLES! But, we’re not just making any kind of waffles. We’re making my Savory Bacon, Cheddar, & Chive Waffles. Yes, this is a savory waffle. I know it might sound strange; but, when you taste it, you will fall in love!

What makes a waffle batter different?

Waffles are one of my favorite breakfast items! I will take them over pancakes any day. They are buttery, crisp, and fluffy. The main cause for their deliciousness is the batter itself. Waffle batter usually has a higher fat and sugar content compared to pancake batter. The additional fat sugar allows for the batter to crisp up beautifully into a golden color. The inside, however, stays light and fluffy.

No matter what you do, never use pancake batter to make waffles. Even if a box of pancake mix says that you can, please do not. You will not get the same end result. You’ll just get a pancake shaped as a waffle. If you do not have time to make a batter from scratch, get a quality waffle mix.

Savory Bacon, Cheddar, And Chive Waffle Ingredients

  • Bacon: As one of the main ingredients, the bacon adds saltiness to waffles. Plus, bacon makes everything better! It is roughly chopped after it is cooked. Try cooking it in the oven! It will save you some time.

  • All-Purpose Flour: The flour thickens the batter and helps all of the ingredients come together. The batter should have a medium consistency (not too thick and not too thin).

  • Baking Powder: The baking powder acts as the leavening agent for the batter. Without it, the batter will not rise and expand.

  • Seasonings: Since this is a savory waffle, there needs to be a few seasonings. I decided to use onion powder and garlic powder to make the batter a little bolder. The salt is automatically added into the batter. The salt helps to balance the flavors.

  • Sugar: The sugar adds the right amount of sweetness to the batter. It reminds you that it is still a waffle regardless of the additional ingredients.

  • Milk: The milk is the liquid component of the batter. It also helps to create a looser batter. A looser batter will create a crisp golden crust.

  • Eggs: The eggs act as binder for the batter. You only need two for this recipe.

  • Butter: I used salted butter in this recipe. It adds more flavor in my opinion. Plus, the butter helps to create the beautiful golden color.

  • Vanilla Extract: I added just a tablespoon of vanilla extract to give some extra flavor.

  • Cheddar Cheese: I used mild cheddar cheese for my waffles. But, you can use other types of cheddar. A cup will be just enough.

  • Chives: The chives add the contrasting color to the waffles. The green looks great going throughout the batter.

How to make Savory Bacon, Cheddar, And Chive Waffles

  • Step 1: Cook the Bacon. Heat a skillet on medium-high and cook bacon until crispy.

  • Step 2: Set-Up the Waffle Iron. Preheat waffle iron between medium-high to high.

  • Step 3: Mix the Dry Ingredients. While the bacon is cooking, mix the flour, baking powder, salt, onion powder, garlic powder, and sugar in a large bowl. In another bowl, mix the milk, eggs, butter and vanilla.

  • Step 4: Finish the Bacon. Remove the bacon from the pan, and remove the excess fat. Allow the bacon to dry on a paper towel or wire rack. When cool, roughly chop the bacon.

  • Step 5: Mix the Wet Ingredients. Mix together the dry and wet ingredients just until smooth. Fold the bacon, cheddar, and chives into the batter.

  • Step 6: Prep the Waffle Iron. Spray preheated waffle iron with non-stick spray.

  • Step 7: Make the Waffles. Pour ⅓ - ½ of a cup of batter into the waffle iron and spread. Cook until golden brown. Serve hot and enjoy!

Notes:

Tips for Making the Perfect Waffle:

-Make sure your waffles iron is on a higher heat setting (medium-high to high).

-Try finishing your waffles in the oven. This will allow them to crisp up a little more.

-Use a quality waffle iron and spray the iron beforehand to prevent sticking.
