I replaced 2 cups of broth with 16 ounces of water and 2 tsp of better than bouillon sautéed onion flavor. I think it adds more depth to the soup. Delicious recipe.

I am quite an avid cook. I followed the recipe. I will tell you the truth. It was horrible. I literally poured it down the sink. I had to start my dinner completely over. Luckily I had 2 filet mignons available. Very disappointed….but it happens.

They weren’t cooked in 9 hours? Wow, mine were definitely cooked. Might possibly be if the onions were cut really thick or difference in temperature in the slow cookers.

FAQs

How do you deepen the flavor of French onion soup? ›

Tomato paste is added for a touch of sweetness that truly deepens the broth. It does sound unusual for this soup, but believe me, do not skip it. Garlic purée adds another layer of garlic's sweet flavor without the acrid overwhelm fresh garlic can infuse.

Should you cook onions before putting in slow cooker? ›

It can be nice to cook the onions beforehand, as the flavour is different to when you put them in raw, but experiment both ways as you may find you prefer one. It can also be good to brown meat to give it some colour, but again, this is not essential.

Why do you put baking soda in French onion soup? ›

Baking soda speeds up browning (that Maillard reaction you may have heard about) and leads to softer onions by breaking down the cells faster.

Does soup taste better in slow cooker? ›

You'll be rewarded with richer, more intense flavors in your soup. There is very little evaporation in the slow cooker. If you're adapting a regular soup recipe, it's likely that you won't need to use all the liquid called for. Put all your ingredients in the slow cooker and then pour the broth over top.

What can I add to French onion soup to make it better? ›

To amp up the flavor further, I add a generous amount of white wine, along with aromatic thyme and garlic. Then, I finish it all off with a classic French onion soup essential: toasty baguette topped with melty cheese!

How to add richness to French onion soup? ›

Butter, sprinkle of sugar and teaspoon of Worcester sauce. Melt butter in pan, add onions, sugar and Worcester Sauce, gently fry until onions have browned slightly and sweetened. Add your sherry or wine and reduce for 10 minutes. Add beef stock and let the soup summer for half hour.

Is 4 hours on high the same as 8 hours on low in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Why did my onions turn blue in slow cooker? ›

If you cook red onion with alkaline foods, such as nuts, lentils, and some vegetables, those anthocyanins revert to their blue hue. The same is true of red cabbage. To maintain the red hue, add a little acid, such as a splash of vinegar or a squeeze of lemon juice.

What vegetables should not be added to a slow cooker? ›

Tender vegetables

Vegetables such as peas, asparagus and peppers can become a flavorless, mushy mess in a slow cooker.

Why do you put lemon juice in soup? ›

In this case, however, the lemon provides more of a flavor undertone that enhances other seasonings like thyme, parsley, and turmeric. According to trained chef Leetal Arazi, who spoke with Real Simple, you can bring a "zesty flavor" to your soup simply by adding lemon.

What is the best wine to use in French onion soup? ›

Wine is optional to deglaze the pan and add flavour to the soup. I recommend a dry white or red wine, such as a good quality Pinot Grigio/Gris, Sauv Blanc, Sémillon, Chardonnay, Merlot or Pinot Noir. Generally, if you can't drink it, don't cook with it.

Why do you add flour to French onion soup? ›

Onion soup, at its very essence, is nothing more than onions and water boiled together. Period, done, finished, everything added from that point on is pure opinion. Caramelizing the onions brings out sugars, and makes a more luxurious silky and sweet soup, adding flour gently thickens and provides body.

Can you overcook soup in a slow cooker? ›

"When a slow cooker is too full, it may not heat the food evenly," explains Leal. As a result, some parts of the dish may overcook, while others remain undercooked. "This can also increase the risk of foodborne illness, because the food might not reach a safe temperature throughout," she says.

Do you stir soup in slow cooker? ›

Due to the nature of a slow cooker, there is no need to stir the food unless it specifically says to in your recipe. In fact, taking the lid off to stir food causes the slow cooker to lose a significant amount of heat, extending the cooking time required. Therefore, it is best not to remove the lid for stirring.

Is it better to do slow cooker recipes on low or high? ›

Foods take different times to cook depending upon the setting used. Certainly, foods will cook faster on high than on low. However, for all-day cooking or for less-tender cuts, you may want to use the low setting.

How to doctor up canned French onion soup? ›

Infusing the soup with a richer taste is as easy as quickly sauteing crushed garlic before pouring the soup in. Some soft, buttery garlic sauteed in earthy olive oil is the perfect addition to enrich canned French onion soup.

How do you get the depth of flavor in vegetable soup? ›

A squeeze of citrus, a dollop of yogurt or a drizzle of cream, a dusting of cheese or a good chile powder, a sprinkling of some herbs or croutons — all can take a perfectly fine soup into the realm of the delectable. Even a spiral of good olive oil to finish and some coarse sea salt can do wonders.

How do you get the depth of Flavour in vegetable soup? ›

Adding a parmesan cheese rind to the simmering soup infuses it with salty, umami flavor. This is SUCH an easy way to add tons of flavor to soup. Look for parmesan cheese rinds at the cheese counter in your grocery store.
