If you need an easy, quick and cheap meal this is it! Less than $1.00 per serving, but they are delicious! My kids, especially Barrett, loves chicken and dumplings. Even for breakfast, lol! I was making this recipe earlier Saturday morning (so to have good light for pictures) and the dumplings had just finished cooking and Barrett came thru the kitchen asking, “Are the chicken and dumplings done?” I just laughed, because it was breakfast time, but guess what he had for breakfast? LOL, – Chicken & Dumplings.

What is the secret to good dumplings?

Well, my son Barrett, would say, “Salt!” He actually said that these were the best dumplings that I had made and I make them a lot. He said that I finally added enough salt to them, LOL! So, the secret to good dumplings is definitely the seasonings, because without that then you almost just have a chicken broth taste.

Is biscuit dough the same as dumplings?

Technically a biscuit dough and a dumpling are not the same, because biscuit dough is meant to be baked and dumplings are meant to be boiled. However, I have learned that a biscuit dough can be boiled just like dumplings. Plus, using a can of biscuits to make dumplings is so much easier than making dumplings from scratch. And, a lot quicker. It takes literally minutes to open up the cans, bring to a boil and dump in the biscuits.

Do you cook dumplings with lid on or lid off?

You can cook dumplings with a lid or without a lid. But, I choose to cook my dumplings without a lid, because I am constantly stirring. Plus, mine tend to boil over and spill onto my stove, mainly because I get side tracked and forget them, LOL. So, I just stay by my pot and stir, because it only takes a few minutes for the dumplings to get done.

Are dumplings better with butter or shortening?

You can make dumplings with either butter or shortening. I love using can biscuits for my dumplings. Sometimes, I will buy butter biscuits and then I have also made dumplings out of buttery crescent rolls. My kids really like the Hawaiian crescent rolls in our chicken and dumplings. It sounds unusual, but you should try it.

Do you flip dumplings when cooking?

I don’t actually flip my dumplings when I’m cooking. I am constantly stirring my chicken and dumplings and so the dumplings are flipping while I am just stirring with a spoon.

How long should I boil dumplings for?

I cut up my biscuits in 8 pieces, so the dumplings will cook quicker. Usually, I boil my dumplings for 6-8 minutes. When I believe that the dumplings are done, I will spoon out one dumpling and cut it in half and it will be done in the middle, not goey like raw dough.

Step 1 – Gather Supplies

Step 2 – Add all ingredients to the pot, except the biscuits.

  1. Gather your supplies: chicken broth, water, cream of chicken, canned chicken, biscuits, salt, black pepper and onion flakes. A large pot and spoon.
  2. Add your chicken broth, water, cream of chicken, canned chicken and seasonings to the pot and bring to a boil.
  3. While your above ingredients are coming to a boil cut up your biscuits. Usually, I cut each biscuit into 8 small pieces.
  4. Once your soup mixture has begun to boil, place your biscuit pieces into the boiling pot and stir
  5. Reduce your heat to medium heat
  6. Do not leave the pot, because it will not take very long to cook the dumplings, plus my pot tends to boil over if I leave it, so stay by it and stir.

Bring soup to a boil.

Step 3 – While soup is coming to a boil, cut up the biscuits. Cut each biscuit into 8 small pieces.

Step 4 – Once soup begins to boil, add the biscuits and stir.

Keep stirring and don’t leave your dumplings. Dumplings take approximately 6-8 minutes to cook. Below is a pic of a dumpling that I cut in half. You can see that the dumpling is done, because it is not doughy inside and looks dry.

How do I store leftover chicken and dumplings?

Take your leftover chicken and dumplings and spoon them into a bowl with an airtight lid and place in the refrigerator for up to 3-4 days. You may also freeze the dumplings for up to 3 months. You can also add your chicken and dumplings to meal prep freezer containers for lunch meals thru out the week. I do this for Gerald. I will take some freezer containers, add the leftovers, label the containers and freeze. Then, Gerald can choose what he wants to take to work for lunch. This way, he has lunch ready and I don’t waste any leftovers.

Ingredients

  • 2 - 12.5oz cans of chicken breast
  • 2- 10.5oz cans of cream of chicken
  • 2 - 8 count cans of jumbo biscuits
  • 32 oz chicken broth
  • 4 cups of water
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp onion flakes or dried minced onion

Instructions

  1. Take a large pot and add the chicken broth, water, cream of chicken, cans of chicken breast and seasonings
  2. Bring soup mixture to a boil
  3. While soup mixture is beginning to cook, cut up each biscuit into 8 pieces
  4. Once soup mixture begins to boil add the cut up biscuit pieces to the pot and stir
  5. Reduce the heat and stir until dumplings are done
  6. May take 6-8 minutes for dumplings to cook.
  7. Spoon out one dumpling and cut it in half. It should be done and not doughy.
  8. Remove from heat and spoon up into bowls
  9. Enjoy!
