With the weather warming up, I’ve been back to craving grain bowls piled up with fresh spring veggies and drizzled with a flavorful sauce. This time, the sauce was vegan Green Goddess Dressing made with avocado and herbs.

For the grain bowls, we roasted spring veggies like carrots, asparagus, and radishes, and used them on top of the easiest, most delicious organic SEEDS OF CHANGE™ Quinoa and Brown Rice with Garlic that I found at Albertsons.

I’m learning more and more that homemade dressing is the way to go—whether it’s simply a drizzle of olive oil and lemon with a pinch of salt and pepper or a blender dressing like this one.

Green Goddess is a dressing typically made with dairy and egg products, like sour cream and mayonnaise, and lots of herbs. It’s easy to make this dressing vegan by swapping ripe avocado for the mayo.

How to Make Green Goddess Dressing

Step 1: Add Ingredients to the Blender

The best way to make this salad dressing is in the blender. That way you can toss all the ingredients right in and they will get nice and smooth. Under all those herbs is the flesh of an avocado.

Goddess ingredients:

  • Avocado
  • Fresh lemon juice
  • Apple cider vinegar
  • Parsley
  • Basil
  • Green onions
  • Garlic
  • Pinch of sea salt

Step 2: Blend!

While the blender is running, add water as needed through the hole in the top. Use the tamper to help push the herbs down. You might need about 1/2 cup of water.

Step 3: Transfer to a jar

Once the dressing is smooth and has reached the desired consistency (can be more or less watery), transfer to a dressing jar. Store your Green Goddess Dressing in the refrigerator until ready to use. It will last at least a few days.

How to Make a Grain Bowl

The base for this springtime bowl is SEEDS OF CHANGE™ Quinoa and Brown Rice with Garlic. The garlic flavor was so delicious and it took 90 seconds to make. I love that my kids are getting old enough to make this as a quick and easy snack for themselves, too. The packet of rice and quinoa can be microwaved or heated up on the stovetop, which I appreciated since we didn’t even have a microwave for years. I also love that this brand uses organic ingredients and their mission is to donate 1% of profits to help more people enjoy real food, grown from seed.

Top the grain bowl with your favorite ingredients. I picked up the Quinoa & Brown Rice with Garlic in the rice aisle right next to the dried quinoa at Albertsons. There’s a mobile app where you can find coupons, too.

I roasted spring carrots, asparagus, and radishes with a drizzle of olive oil and sprinkle of salt and pepper for 12 minutes at 450 degrees until tender.

Every grain bowl needs a sauce and while I often go for tahini sauce for Mediterranean bowls, Thai peanut sauce for Asian bowls, and salsa for Mexican, this oil-free Green Goddess Dressing is just the thing for a bright spring bowl.

It's a healthier version of the classic Goddess dressing. Use it as a dip for veggies, a dressing for salad, or sauce for grain bowls.

Ingredients

  • 1 ripe avocado
  • 2 cloves garlic, peeled
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1/2 cup Italian parsley
  • 1/2 cup fresh basil
  • 1/2 cup roughly chopped green onions (1-2 onions)
  • 1/2 teaspoon sea salt
  • 1/2 cup water, plus more as needed

Instructions

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a blender. Add the garlic, apple cider vinegar, lemon juice, parsley, basil, green onions, salt, and half the water.
  2. Close the blender lid and blend. Pour more water through the hole in the top of the blender and blend until smooth, using as much water as needed to reach the desired consistency. Season to taste with additional salt, if desired.
  3. Transfer to a glass storage jar and refrigerate until ready to use.
